How this muffin recipe can help your FOOD FREEDOM!

WHAT?

EATING MUFFINS CAN HELP MY FOOD FREEDOM?

YES YES YES!!

You have to love what you eat and you have to enjoy the goodness, pleasure and deliciousness of food.

Without that you will feel constantly deprived, dis- satisfied and ya know where that leads right?

A BINGE....

One of the biggest things I did for myself when I finally decided to become a woman who was completely FOOD FREE was this:

I started eating foods that were on my NO list.

This seems crazy right?

Well here's the deal- I was eating them anyway...

But I realized something

I ate them in a frantic way.

I ate them in denial.

I ate them when I was upset, frustrated, sad and depressed.

I ate them unconsciously

So I decided I am going to eat them with

Awareness

In a calm way

Consciously

When I was present, not in an emotional upset.

The more I incorporated foods on the NO list in this manner all foods became a YES,

Foods has less charge,

I started losing weight,

I started to feel great

and

I stopped eating and started living!

I found this Blueberry - Corn Muffin recipe on the internet. A place I find most recipes. But here's another hint.

I change around most recipes to be more "healthy".

I use less sugar or better quality sugar.

I use whole wheat flours or sometimes I make it gluten free (like I did with these muffins)

I add extra fruit.

Things like that.

Check out this delicious recipe below.

I kept their original recipe and showed you how I adapt it to make it "Darshana approved", as my husband says

BLUEBERRY CORN MUFFINS

(Adapted from Country Living On line Magazine)

WHAT YOU NEED:

* 1 cup stone-ground yellow cornmeal

* 1 cup flour ( I used rice flour)

* 1/2 cup granulated sugar ( I have made this recipe a few things, sometimes I use sucanant and sometimes I have used raw, local honey, or brown rice syrup)

* 2 teaspoons baking powder

* 1/2 teaspoon sea salt

* 1 large egg- USE ORGANIC

* 1 cup buttermilk (You can use soy milk or rice milk.... I used the buttermilk and if I did it again I would try whole milk)

* 6 tablespoon unsalted butter, melted and cooled- USE ORGANIC

* 1 cup blueberries- FRESH OR FROZEN, USE ORGANIC

* 1 cup (about 2 ears) fresh corn kernels ( I used ORGANIC frozen)

* 1 tablespoon(s) turbinado sugar ( I CUT THIS, YOU DON'T NEED IT)

WHAT TO DO:

Preheat oven to 400°F.

Grease muffin pan and set aside.

Combine cornmeal, flour, sweetner, baking powder, and salt in a large bowl and set aside.

In a separate bowl, whisk egg, buttermilk, and butter together and stir into dry ingredients until just combined.

Gently fold in blueberries and corn.

Divide batter in muffin pan.

Bake until a skewer inserted into center of muffin comes out clean.

About 25 minutes.

These muffins will be perfect to pack for a busy week at school... looking forward to baking them thoughtfully on sunday and remembering to eat them consciously!

 i just love how you are all about acceptance of ourselves and really embracing life.i love to cook for my family and share good food with friends.it is a life pleasure.....my journey with food is all about love and treating myself well.that means not using food for emotional reasons.i have been thinking alot about the 'diet" industry lately and all of the b**** and gimicks they use....yucky, fake foods and supplements when nature has all the wisdom.....not too much food, high quality and move that body most days......pretty simple yet how i can complicate it.....anyway, thank you for the recipe.....i am going to make these muffins.....i really appreciate hearing your voice darshana in my life......
