Mango Coconut Banana Pudding
2 C dried mango
1 ripe banana
1 1/2 C dried, unsweetened coconut
1 T vanilla
2 pears
1. Cut dried mango into pieces with kitchen scissors, and soak in just enough fresh water to cover until soft (15 min)
2. Cut banana into pieces for blending, and slice 2 pears for parfait
3. In a food processor or blender, grind the coconut into a powder, then set aside
4. Blend the softened mango and its soak water until smooth, then add the banana, vanilla and coconut, and blend all until creamy
5. Place the sliced pears in the bottom of your parfait glass or serving dish, and spoon custard on top.
Sprinkle a dash of cinnamon on top and enjoy completely!
MANGO PUDDING- (variation)
3/4 cups mango
water
1-2 peaches
1/2 cup shredded coconut
Soak mangos in water for 15 minutes until soft.
When soft, blend in blender with soaking water. Add coconut and peaches and blend until creamy. Serve room temp or chill
